Fresh Mango Bread - TWD

This mango bread was chosen by Kelly of Baking with Boys. You can get the recipe and see how Kelly's turned out HERE. Hers looks much better than mine. I thought that it would be a simple recipe, easy ingredients to get together and be similar to banana or strawberry bread that I make. I was wrong. Well, it was simple to make and the ingredients were all in my cupboards (except for the mango) but it was not similar to banana or strawberry bread.

To begin, my mango didn't even come close to being 1 cup of cubed fruit. More like 3/4 cup. I didn't want to go to the grocery store for another mango so I threw in some fresh raspberries and a little bit of sliced cubed bananas. I baked it for the 90 minutes that it called for and then let it cool overnight.

My results:

Maybe I overbaked mine because it was quite dry. I like moist breads and baked goods. Or maybe I should have covered it with a foil tent. Or it could have been better with the right amount of mango and not raspberries or bananas in the mix. Not sure? Whatever it was.....I wasn't very fond of it and won't be making this one again.

Sorry your mango bread turned out dry! Mine was nice and moist, I loved it!

It stinks when you do all that work and it turns out to be a disappointment. The mix of fruit sounds good, though.

Mine cooked in one hour so maybe you overcooked it a bit? Mine was moist. I love that you added the extra fruit in yours though. I would have thought that would have been tasty. Maybe try again sometime because it was really delicious to us. :)

What a bummer - it sure looks good, but who am I to talk, I ate all the mango instead of actually baking the bread!

That's too bad! I'm trying to figure out what could have gone wrong. Did you mix it a lot after you added the flour? That could toughen it up and dry it out. The mysteries of baking - sometimes I swear I do things exactly the same way, and I still get different results.

Oh no sorry it wasn't a success, it happens!! And I agree.. Mangos are painful to work with.

I forgot to write down how long, but I'm SURE I didn't bake mine for 90 minutes, more like just an hour. (I'm finding that a lot of Dorie's suggested times overbake things for me.)
Your bread certainly looks good though!

I love your additions, but I'm sorry it wasn't yummy in the end. Maybe the dryness was due to using less mango? They are very wet fruits...

Bummer that it didn't turn out as well as you would have liked. Anything with raspberries make me smile though :)

Your bread looks really nice and doesn't look that dry at all. I'm sorry it didn't work out - did you try wrapping it overnight? Hope next week is a better TWD for you.

Try a little applesauce when you run out of fruit. Adds flavor and moistness.
