TWD CATCH UP

I am going to cram 3 TWD posts into one. I have been so busy and have been baking along but have not been posting. Time to get my act together!

These applespice bars were OK. I thought that they tasted delicious right out of the oven after the frosting was just cooled. But the next day....not so much. I stored them in a Tupperware container and they were a little mushy and the frosting seemed to soak through the bars. The recipe was chosen by Karen from Something Sweet and can be found HERE. I think that if I would make them again I would halve the recipe and intend to eat them all at once maybe for a party.

This key lime pie was tasty. I might have left the pie under the broiler a tad too long though. It was almost black in spots. Still good though. The recipe was chosen by Linda of Tender Crumb and can be found HERE. My only criticism about this was too much butter. I should have used half. I would rather have more of a tart lime taste than a lime/butter combo.

These YUMMY espresso cheesecake brownies are PHENOMENAL! I wouldn't change a thing about them. I could sit down right now and eat half the pan they are that good. I used 4 oz of semi-sweet chocolate and reduced fat cream cheese. I also only had about a half cup of sour cream and about a quarter cup of powdered sugar. Therefore, my topping wasn't that thick. Double Chocolate Pudding Pie - CEiMB

I was late for TWD and I am late again for CEiMB. What a slacker I am!! But this was actually made on Thursday. I just didn't get around to eating, taking photos or posting about it until Friday and today. Better late than never.

This pie was chosen by Tessa at Handle the Heat. When CEiMB was in the beginning stages the banana cream pie was chosen. I think this chocolate pie of Ellie's was better than the banana cream one. Both of them are a tad gelatiny for me though. It is not bad...but I am certainly not running to the refrig to eat the leftovers!

The only modifications that I did to the recipe was substitute dark chocolate cocoa powder and used 1.5 cups of 2% milk and 1/5 cups of skim.

Banana Cream Pie - TWD

PART TWO:

I take back everything I said about this pie crust earlier today! It may not be the prettiest pie crust, but is sure is tasty. In the taste department it beats Pillsbury hands down. However, I still can't declare it a winner in the beauty contest.

This is a really good pie. I am not normally a huge banana fan either. But the brown sugar/cinnamon/nutmeg custard tastes phemomenal. The Hubster says that it reminds him of a pumpkin pie. The whip cream with the small amount of sour cream added gives it just the right touch. It is a winner.

Florida Pie - TWD

Another catch up......I made this pie a few weeks ago for a dinner date with our friends. The recipe was originally chosen back in May last year by Diane. The recipe can be found HERE.

This pie was good. It was a little too rich for me though. I love key lime and am not sure why I wasn't too thrilled with this dessert. It was easy enough to make and everyone seemed to like it. It sure was a pretty dessert too.

Another one down and only 20 some more to complete.

Thanksgiving Twofer Pie - TWD

It is not Tuesday, we were given an extension until today if we wanted to make this pie for Thanksgiving. I just didn't get around to post it until now. I actually made this pie on Thanksgiving Day. The recipe was chosen by Vibi. She is from Canada and has the recipe posted in English on her blog. Or you can find the recipe on page 321 in Dorie's cookbook.

I should have followed what the others were saying about this pie. It made way too much filling for a regular pie crust and mine spilled all over the place. I wish that I would have had a deep dish pie dish for this one. I used the pie crust recipe from the cookbook. I have never made a pie crust from scratch so that was exploring new territory for me. The pie crust recipe can be found here on CB's blog. I will be making it again and thought it was simple to put together and tasted fantastic. I made it a couple of days ahead of time, froze it and then partially baked it before putting the pumpkin/pecan filling in. Next time I bake a pie though, I will get myself some of those pie guards that others are talking about. The outer edges of the crust got very brown and crispy for my taste.

The finished pie was good. Just not great. I really liked the pumpkin and crust portion of the pie. Even the pecan pie filling tasted good. The pecans I could have done without. There were way too many. Not being a nut fan in the first place this was just too much for me. I decided to pick out the pecans and eat around them. The Hubster felt the same way. He ate the pecans first "to save the best for last". For the most part, we enjoyed the pie. But we will stick with plain pumpkin pie next year.
