Double Chocolate Pudding Pie - CEiMB

I was late for TWD and I am late again for CEiMB. What a slacker I am!! But this was actually made on Thursday. I just didn't get around to eating, taking photos or posting about it until Friday and today. Better late than never.

This pie was chosen by Tessa at Handle the Heat. When CEiMB was in the beginning stages the banana cream pie was chosen. I think this chocolate pie of Ellie's was better than the banana cream one. Both of them are a tad gelatiny for me though. It is not bad...but I am certainly not running to the refrig to eat the leftovers!

You can find the recipe HERE or HERE. Be sure to check out all the other CEiMB participants as well.

The only modifications that I did to the recipe was substitute dark chocolate cocoa powder and used 1.5 cups of 2% milk and 1/5 cups of skim.

Real Butterscotch Pudding - TWD

This was yummy! I love butterscotch everything. Even though I am not really a pudding eater, I knew that this was going to be good.

The recipe was chosen by Donna. She does such an awesome job with her blog and has some great recipes. She also chose a very easy, delicious recipe. You can find the recipe HERE. She made her pudding into a fancy cream pie.

This recipe is certainly not low fat, by any means. It calls for whole milk, heavy cream and eggs. I also was lucky enough to find a tiny bottle of JB scotch. I had no idea that scotch is basically a whiskey?! Huh...who knew?

The pudding was quite simple to put together. After reading the P&Q I was a little concerned that it was going to be a messy affair. I used my food processor and didn't seem to have any problems.

The finished product was very good. My oldest son really liked it too. I topped ours with Dream Whip.

The next several recipe picks for Tuesdays with Dorie were just posted today. I can't wait for that Berry Surprise Cake.

Aborio Rice Pudding, White, Black (Or Both) - TWD

I enjoyed this recipe much better than the past two TWD recipes that we have had. Thank you Isabelle for choosing the recipe. You can find the recipe on her blog or on page 412-413 in Dorie's cookbook. I can say that I have ever had rice pudding before making this recipe. Tapioca, yes....but rice...I don't think so. YUMMY!!!

It was very good. I'm glad that I read the PQ section to learn that the recipe in the book is wrong and the pudding actually had to simmer for 50 some minutes instead of 30. That would have made a big difference. My pudding would have been very soupy. I made 1/2 of the pudding white and half black by using leftover mixtures of semi-sweet and bittersweet chocolate. I can't say that I liked either the white or the chocolate better. They were both very tasty! The chocolate pudding did set up better and was firmer. I served the pudding topped with Dream Whip from the aerosol can.

I would make this rice pudding again. Both the chocolate and vanilla too!
