This recipe was extremely time consuming. Not hard. Just took me a long time to make. And 3 hours in the oven with weather being 90+ degree heat plus high humidity that day was just awful. And the broiling of the pineapple and toasting of the coconut was just not my cup of tea. But my husband thought that it was one of the best desserts that he has eaten. In fact, he said that he is "in love" with this dessert. I really did not think that it was that good. Too sweet. Maybe I am just not that "in love" with pineapple as he is.

It's so hard to get excited about a dessert that overheats your kitchen when it's already hot. It looks beautiful! Sorry it was too sweet for you (but you weren't alone in thinking that.)
I totally skipped this one! It's always the ones that I skip that everyone ends up RAVING about! Glad your DH liked it! It looks wonderful.
Well, although you didn't love it, it sure looks great and obviously your husband found it pretty spectacular.

I FAILED so hard at this one, it was laughable.
I heard from a lot of places that this was way too sweet, but others loved it. I guess to each his own.
Wow, that looks absolutely perfect! I couldn't figure out a way to make it without coconut and was worried about having the oven on so long, too, so I didn't make it. Based on this review, though, I think my husband (also a Ben!) would love this one so I'd better try it!
