

This just did not work out for me. I wasted a dozen eggs and 4 cups milk before giving up. If I hadn't of run out of eggs and milk I would have tried again. Two times the creme anglaise turned into scrambled eggs. It looked disgusting. This is quite an odd recipe.
I will try again. Maybe this week yet?!

That happened to me too. I used 9 eggs and was only making half a recipe. I finally got it and it was good so try again just take them off the stove at about 160 not 180 because they continue to cook will straining them. Well that's what worked for me anyway.
How frustrating - I would have thrown in the towel after 6 eggs. I'm impressed by your determination.
Go for the chocolate cake - it's quite good!

It took me 2 tries, but since I was making half recipe I only wasted 3 yolks. (You can use the egg whites for the frosting for next week's cake!) Someone mentioned making the creme anglaise in a double boiler - that would prevent the scrambling I think.

I am sooo sorry that your creme turned out like this.. you know.. I THINK this might have worked for me.. I didn't really let the milk come to a full boil.. so when I poured a bit on the eggs it was perfectly fine.. honestly when I drained it there wasn't much on the strainer.. I think that was it.. but I hope you DO try it again so you can taste how delicious this dessert can be. :)
Oh, and a few more things:
I had saved my scrambled creme anglaise and tonight I ran through it with my immersion blender (could also put it in a regular blender) and it turned out smooth and perfect. So if it happens again, you could try that. Also, the recipe for creme anglaise in the back of Dorie's book is different, and it may work better.

That is a bummer. Sometimes it is just not meant to be. I bet that the cake is going to work out just perfectly!
If you try it again, don't let the temperature get above 170. 180 is way too high. Half a recipe will still work fine.
It took me a couple of tries too. Wasn't bad, but too much work for puffy air. The creme was the best part. Let us know how it turns out when you try again.
